CME Students Publish in SCI Tier-1 journal Food Hydrocolloids


The Centre for Postgraduate Studies and Research congratulates Fang Xiao, Li Yunjia, Dr. Kua Yin Leng, Chew Zhi Ling, Dr. Tan Khang Wei, Dr. Terri Lee Zhuan Ean, and Cheng Wai Kit from XMUM School of Energy and Chemical Engineering for their recent publication in Food Hydrocolloids, an SCI Tier-1 journal with a latest impact factor of 11.504.   

Fang Xiao and Li Yunjia are final-year undergraduate students of XMUM Chemical Engineering Programme, while Chew Zhi Ling and Cheng Wai Kit are masters and PhD students under the supervision of Dr. Kua Yin Ling and Dr. Tan Khang Wei, respectively. This work is conducted in collaboration with Prof. Gan Suyin from University of Nottingham Malaysia and Dr. Harrison Lau Lik Nang from the Malaysian Palm Oil Board (MPOB) as a Fundamental Research Grant Scheme (FRGS) project (Grant number:  FRGS/1/2021/TK0/XMU/02/2). Dr. Kua Yin Leng is the corresponding author of the article.

The title of the publication is “Insights on the potential of natural deep eutectic solvents (NADES) to fine-tune durian seed gum for use as edible food coating”. In this paper, related findings on the use of durian seed gum, NADES, and eutectogel as food coating are reviewed. Firstly, gum extracted from durian seeds is evaluated for the formulation of eutectogel food coating, which is tunable using NADES. Then, NADES and eutectogel are reviewed and discussed along with the possible solutions to encounter the potential challenges of eutectogel formulation for use as food coating. Possible choices of NADES are also identified and suitable computational tools for the selection of HBA and HBD in the formulation of NADES are reviewed with the objective of fine-tuning the properties of eutectogel produced from durian seed gum.

Dr. Kua Yin Leng obtained her Ph.D. degree in Chemical Engineering from University of Nottingham Malaysia. Before that, she worked as an Engineer at Shin-Etsu Chemical company in the electroplating & inorganic coating industry for 6 years. Dr. Kua is currently an Assistant Professor in the School of Energy and Chemical Engineering at Xiamen University Malaysia. She is interested in the research of palm phytonutrients, natural deep eutectic solvents, green extraction technologies and food waste valorization.
